I've become a big fan of Special K cereal (I really just love any kind of cereal, but I feel good when I grab the box with the big red "K" on it and not the cartoon character :). Now, I've only bought the kind with the strawberries in it even though I really don't like them in the cereal (too tart for my taste). "Well why doesn't she buy the original?" Well curious minds, read on! Since buying dried strawberries at the Whole Foods store is like 6 bucks for an itty bitty container, I pour a bowl and put all the little berries in a container. After about 2 boxes, I have enough to make one of my favorite cookies (and that recipe just so happens to be from Cooking Light!). They are yum-E! Even my healthy-food-hating husband loves these :) So if I've peaked your interest, here's the recipe, enjoy! :) OH, and side note, I didn't gain 1 pound on vacation! Pretty sure that's never happened before! Maybe because (in the words of Sarah B), snowboarding probably burns "a bazillion" calories :)
White Chocolate, Strawberry, and Oatmeal Cookies
Yield: 2 dozen (serving size: 1 cookie)
Ingredients
3/4 cup all-purpose flour (about 3 1/3 ounces)
1 cup regular oats
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 large egg
3/4 cup coarsely chopped dried strawberries
1/3 cup premium white chocolate chips (such as Ghirardelli)
Cooking spray
Preheat oven to 350°. Lightly spoon flour into a measuring cup; level with a knife. Combine flour, oats, baking soda, and salt; stir with a whisk. Place sugar and butter in the bowl of a stand mixer; beat at medium speed until well blended (about 3 minutes). Add vanilla and egg; beat well. Gradually add flour mixture, beating until blended. Add strawberries and chips; beat at low speed just until blended. Drop dough by tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 12 minutes or until lightly browned. Remove from oven; cool on pan 1 minute. Remove cookies from pan; cool completely on wire racks.

I think it is thrifty and fabulous that you pick the strawberries out of your Special K. (I agree about not liking them in there...of course I eat my cereal without milk so that really makes 'em taste tangy and tart.)
ReplyDeleteThose cookies sound amazing...especially because I know anything you bake is delish. AND because there are few things I love more than white chocolate. Mmmm!!! :)
Fun post!
